如何选购大米?

一、在购买散装大米时,主要用感官鉴别大米质量,一般可从以下四方面进行挑选,一是看大米的色泽和外观,正常大米大小均匀、丰满光滑,有光泽,色泽正常。二是抓一把大米,放开后,观察手中粘有糠粉情况,合格大米糠粉很少。三是闻一闻大米的气味,正常大米具有清香味,无异味。四是尝大米的味道,取几粒大米放入口中细嚼,正常大米微甜,无异味。

   二、优质大米与劣质大米有什么区别?

  优质大米一般为米粒饱满,洁净,有光泽,纵沟较浅,掰开米粒其断面呈半透明白色。闻之有清新气味,蒸熟后米粒油亮,有嚼劲,气味喷香。劣质大米主要是米粒不充实,瘦小,纵沟较深,无光泽,掰开米粒断面残留褐色或灰白色。发霉的米粒多呈绿色、黄色、灰褐色、赤褐色,且光泽差、组织疏松,有霉味或其它异味。吃起来口味淡,粗糙,粘度也小,这也是陈米的特征。

   三、 如何鉴别高水分大米?

  大米正常含水量应在1 5%以下。高水分大米的含水量多在1 5.0%以上。高水分大米短期内就会变质,失去食用价值。对于高水分大米的判定可通过感官鉴别来识别其水分含量的大小。大米水分在1 5%以内时,用手摸、捻、压、掐等感觉很硬,用手插入大米中光滑易进,手搅动时发出清脆的声音。用齿嗑大米籽粒时,抗压力大,会发出清脆有力的破碎声响。高水分大米的色泽较阴暗;组织结构疏松,牙嗑时抗压力小,破碎时响声较低;手插入大米中有涩滞和潮湿感,有时拔出手时籽粒易粘在手上。
